Ahtanum USA, Yakima Good for lagers,
american ales, Floral.
citrus, sharp and piney.
Amarillo  USA  Grown in Washington.
A newer multi-use hop
with a nice citrus-flower
bouquet and
medium-high
acid content suited for
bittering. Used in
American
Ales and IPAs.
Aquila  United States  Not widely used.
Banner United States  Good yield.
Developed in 1988.
Use largely discontinued
due to poor storage.
Brambling Cross UK, Canada Grandparent of Saxon
and Viking, they have a
unique toasty, buttery,
slighly resiny aroma with
some woody notes.
Brewers Gold USA, UK, Germany Sibling of and similar
to Bullion only
maturing earlier and
more disease resistant.
English/wild Canadian
cross. Pungent English
character
Bullion USA, UK Neutral. Not highly
regarded.
Cascade USA  Spicy with citrus notes.
Slightly grapefruity.
Centennial USA  Aromatic but
acceptable for bittering.
Medium aroma with
floral and citrus tones.
Good in medium to
dark ales.
Challenger UK  Popular bittering
hop used primarily in
British ales and lagers.
Mild to moderate aroma,
but quite spicy.
Chinook USA  Spicy, Medium to
Heavy.Very strong
bittering ability used
in all American ales
and lagers. Aroma is
very floral.
Cluster USA  Used for bittering
and flavor qualities
in light and dark
American lagers.
Aroma is very floral.
Columbus  USA  Used mainly for bittering
with some flavor qualities
as well. Aroma is
pleasant.
Comet   Very bitter, use
sparingly or with
other hops
Crystal  USA  Mild. 'Noble'.
Used mainly for its
aroma which is
mild and pleasant.
Czech Saaz Czech Replublic Very mild. 'Noble'.
East Kent Goldings UK  Mild, slightly flowery.
Eroica USA  Mainly used for
bittering and good
aroma for pale
ales and dark ales,
and also stouts. The
aroma is quite strong
but not unpleasant.
First Gold UK  First commercial dwarf
hop designed for aroma
consideration in England,
a very promising hop.
Fuggle UK, USA Mild. Mainly used for
finishing and dry hopping
especially pale ales, porters,
and stouts. Aroma is mild
and pleasant, spicy, and soft.
Galena  USA  Neutral. This hop can be
very bitter, but blends
well with finishing hops.
Used in American ales
and lagers, but suitable
for all beer styles. Aroma
is medium but pleasant.
Glacier USA  An excellent new variety
with balanced bittering
properties combined
with a good aroma
profile.
Goldings BC, Canada, USA Mild. Slightly flowery.
Hallertau USA  Good for all around
bittering and finishing
stock ales, Belgian ales,
and continental style
lagers. Aroma is mild,
pleasant and flowery.
Hallertau Hersbruck Germany  Mild to strong. 'Noble'.
Hallertau Mittelfruh Germany  Fine, 'Noble'.
Hallertau Tradition Germany  Fine, 'Noble'.
Herald UK  New high-alpha acid
dwarf.
Hersbrucker USA  Drier, spicier than
Hallertauer. Most
important aroma
variety in Germany.
Horizon United States  Pedigree A diploid
high alpha, low
co-humulone selection.
Cross made in Oregon
in 1970, half-sister
of Nugget. Typical
Beer Styles All Ales
and Lagers.
Huller Bitterer Germany  Moderate
Liberty  USA  Used mainly for
finishing German
and American style
ales and lagers.
Aroma is mild and
 pleasant.
Lublin  Poland  Mild. 'Noble'.
Marynka Poland  It is a typical bitter hop
with dual charactgeristics
i.e. it contains both high
aroma values and high
content of bitter
substances.
Millenium USA  Very new hop.
Primarily used for alpha
potential.
Mt. Hood  USA  Used mainly for aroma
and flavor in American
and German style ales
and lagers. Aroma is mild,
pleasant, light, and clean.
Nelson Sauvin New Zealand  Early trials with Nelson
Sauvin immediately
revealed it to be
somewhat different in
its brewing character than
other hop cultivars.
This variety imparts
certain grape like flavours
to the beer; flavours
which have yet to be
positively identified.
To acknowledge this
Sauvignon Blanc
flavour the variety
was named Nelson
Sauvin.
Newport  USA  Viewed as a
high-bittering alpha hop.
Northdown UK  Mellow English
higher alpha-acid hop.
Northern Brewer USA  Used for bittering
with strong flavors
and very fragrant in
steam beers, dark English
ales, and German lagers.
Aroma is medium-strong
with evergreen and mint
overtones.
Nugget USA  This is very bitter and
often used in medium to
dark ales and lagers.
Aroma is quite heavy and herbal.
Omega UK  Some Challenger
characteristics.
Getting rare.
Organic Hallertau New Zealand  Commonly used for
aroma variety.
Organic Pacific Gem New Zealand  Widely used as a
bittering hop.
Woody flavor.
Orion Germany  Dual use hop.
Perle Germany, USA Used mainly for its
minty bittering and
good green hop
aromas in all non-pilsener
lagersand wheats.
Aroma is pleasant and
slightly spicy
Phoenix  UK  Attractive English
 aroma with high
alpha-acid. excellent.
Pioneer UK  New dwarf variety
with clean bitterness
and mild English aroma.
Pride of Ringwood New Zealand  Moderate.
Progress UK  Simular to Fuggles
but a little sweeter.

Saaz USA  Used for finishing
pilseners, continental
lagers, and wheats.
The aroma is spicy
and pleasant with
fragrant overtones.
Santiam USA  A newly developed
American aroma
hop that contains
noble hop characteristics.
Simcoe USA  Used for aromatic,
and especially bittering
properties.
Spalt Spalter Germany  Mild, slightly spicy.
'Noble'.
Sterling  USA  Perceived to be
similar to a Saaz and
Mt. Hood combination.
Finding favor as a Saaz
replacement.
Sticklebract New Zealand  Pine-like Aroma with a
hint of citrus
Strisselspalt France  French variety related
to Hallertauer.
Styrian Goldings Slovenia  Mild, pleasant.
Talisman   An improved Cluster
variety.
Target UK, Belgium, Germany Used for its robust
bittering ability in British
ales and lagers. Aroma is
quite intense
Tettnanger Germany, USA Mild, slightly spicy.
'Noble'.
Ultra USA  Newer domestic aroma
variety with Saaz
characteristics.
Vanguard USA  Still being tested and
looked at by micro &
craft breweries.
Warrior USA  New hop with much
potential. Very stable.
Whitbread Golding (WGV) UK  Traditional English
hop with a sweet and
fruity aroma.
Willamette  USA  This hop is used for
finishing and dry hopping
American and British
style ales. Aroma is mild
and pleasant ans slightly
spicy
Wye Target UK  Neutral high-alpha.
Bred from Northern
Brewer crossed with
some Goldenings.
Used for hopped malt
extract and many English
Ales.
Yakima Magnum USA  A West Coast hop
with high Alpha Acid.
Excellent bittering hop.
Yeoman UK  Mixes well with
Mount Hood and
Willamette. Unsuitable
as an aroma hop.
